HOW TO EAT KALE + SWEET SALAD DRESSING + FAVE LINKS

A dreaded sinus infection was headed my way a few weeks ago – one that totally knocked out my mom and two of my sisters. So I picked up three bunches of kale, ate half one every day, and I tell you, all those vitamins + some good sleep saved me from sinus devastation. Just taking good care of myself – that did the trick this round! And seriously, all hail King Kale (its nickname in the nutrition world these days because they’re finding it to be that awesome)!

This is how we ate it around here. First, kale chips, aka crispy goodness. They are Ryan’s fave and soooo easy.

Kale Chips

1/2 bunch of kale, leaves ripped into “chips”

massage olive oil into kale

sprinkle with salt

bake at 375 for 10-12 minutes

And then, “massaged kale,” aka a kale salad. You literally have to rub the kale with the dressing to make it both sweet and chewable – kale is definitely tough. So find a dressing that you love and have at it. We’ve been on a kick with the dressing below, and everyone I share it with asks for the recipe, so…

Sweet Dressing | Yields 1 cup

1/2 cup oil (I vote olive or canola)

1/2 cup honey

2 TBS red wine vinegar

1 TBS wet mustard
1 TBS chopped red onion (onion powder also works)

1 tsp salt

1 tsp poppy seed

…and shake it up!

Lick your salad plate clean. Seriously, though! You’ll want to.

I love eating well. I love feeling good about what I put in my body. Prime fuel makes a prime car cruise! I’ve learned – via trial and error (eating well takes practice, trust me) – that my food plays a big role in my well-being both in the moment and overall health. No doubt I feel like a million bucks versus fifty after choosing to eat a green salad instead of pizza for lunch. And healthy food (obviously) boosts immunity. Isn’t that awesome? Cheers to that

And how great is it to be the trend-setter of our family’s food? Seeing Olivia like kale chips – that was awesome – and Ryan devours them every time. It’s feels so good to take care of my family, too 🙂

    kale chips, eh? I don't know if I'd be brave enough to try those! 😉 Also, while I was reading this post I craved in-n-out… something is seriously wrong with me! Those dresses though!! i want so many of them! Oh how I wish I had a money tree… haha 😉

I hope you love it too! I eat it for lunch usually or when I do it for dinner I add in some shredded chicken with the kale to marinate. Anyways I always love when you post recipes. Thank you!
