So I have a muffin recipe that fits the “food should be easy, fast, and delicious” bill. They are so quick to whip up, I call them “ten-minute muffins.” They are that awesome.
Here’s the recipe (makes 12 muffins):
2 cups flour
1 tsp salt
3 tsp baking powder
3/4 cups milk
1/2 cup oil
1/2 honey (or sugar or agave – whatever you want!)
1 egg
splash of vanilla
1 cup frozen berries
Heat oven to 400 degrees. Mix the dry ingredients together, then dump in all the wet ones and mix again. Fold in the berries. Bake for 18-20 minutes. Voila!
These are more moist than cake (promise!), melty-in-the-mouth, and the perfect balance of sweet. I am always asked “for the recipe, please?” when I share them, and since I can single-handedly eat one-third of the batch in one sitting…I always share them. Ryan and Olivia also really love. I've been on the hunt for a quick and healthy muffin recipe, so I'm gonna have to give this a try! Do you know if you could use 1 C of wheat flour and 1 C of regular flour? Just a thought!
