I just mentioned that Olivia and I made some hot cocoa during our snow day, and we've actually been enjoying this goodness for a few months. I mean, when what's under the chocolate is real and good, why not? Here's the recipe since it's only TWELVE degrees outside (and maybe you're cold, too?)...

Oh, Hot Chocolate! (think "Polar Express")

1 cup milk (any kind works; I use rice milk)
1 heaping Tbs cocoa powder
1 Tbs honey or agave, at least
1 tsp vanilla

Stir all ingredients together in a tiny pot over medium-high heat. Keep stirring, probably for three minutes. If you want super hot cocoa, stir for about five minutes. Drink up. Warm up!

Even while this world is bitter cold...you know how the blue sky gets extra bright against the white? And how snow gets "plopped" on pine trees? And the way that cold air makes you breathe fully and slowy? I really do love these wintry things. This I must remember: embracing this season's beauty makes me a pleasant woman. Mumbling about frost-bitten ears does not. Winter is lovely. Especially in my neighborhood.
